Hello, old friend.

Whew, its been a long long time since my last post. Yes, I realize that only 2 or 3 people read this blog, but nonetheless, I decided it was time to start again.  I am not even going to try to fill in since my last post. That would take forever.  Here is a VERY short rundown on our life today. First, both kids are in school now so I have to figure out how to fill up my days. School is going great. Kiera loves kindergarten and Declan is enjoying 2nd grade. Thank the Lord for our awesome teachers!  Declan is reading longer chapter books now and Kiera complains that she has to write letters.  Hmmmm. We'll get there.

Currently I am working on my fall garden. Even though I feel confindent in my gardening skills, I also feel like each time is an experiment. The summer garden was a huge success with a bumper crop of cucumbers, banana peppers and tomatoes.  I planted seeds this time. Cauliflower, carrots, and broccoli will hopefully be sprouting soon.  

Also this week, I am learning to fill my freezer. So far I have made 2 casseroles. I doubled the recipe for each. First, I made broccoli-shrimp lasagna and divided each into 2 pans. SO I had a total of 4 small square pans of lasagna. Next, I made Texas Hash (fabulous recipe!) which also filled 4 small square pans. We ate one yesterday so I have 7 dishes in the freezer. Today I plan to fix green chicken enchiladas.  Its very satisfying to see them stacked in the freezer.
